Fill a large pot with several centimeters of water and bring to a boil. Place a steamer basket over the pot.
If you are preparing the Surimi yourself, prepare the fish. Remove the skin from the fish fillets as well as any fat and bones. Carefully wash the fish under cold running water using a colander and press with paper towels to remove excess water.

Put in a food processor bowl. If using pre-made Surimi, simply add it to the food processor bowl. Add the egg white, salt, pepper, sugar, and mirin and mix until a smooth paste is formed.

Transfer half of the paste to a small bowl. Mix with the pink food coloring, one drop at a time, until the mixture is bright pink.

Place plastic wrap on a work surface and, using a spatula, spread the white half (to which no coloring is added) on the plastic wrap in a rectangle.
Spread the pink paste on top of the white paste, leaving a small border along the long edges of the white rectangle.
Roll the fish paste into a cylinder using a bamboo mat.
Transfer to the steamer basket and steam for 15 minutes.
