Coat the chicken in the breadcrumbs after mixing them in a large bowl
Fry the chicken once at 180°C until lightly golden, remove for 5 minutes, then fry a second time until deeply golden
In a saucepan, combine the sauce ingredients over medium heat until thickened.
In a large pot/container, toss the chicken fritters with the sauce
Notes
Use a cooking thermometer to check the temperature of the frying oil. This will give you perfectly golden, crispy chicken without burning it.
For an exotic touch, feel free to add a few chopped fresh coriander leaves or Thai basil to your homemade sweet chili sauce.
Serve your crispy chicken with sweet chili sauce alongside white rice, stir-fried vegetables or a crunchy salad for a balanced, delicious meal.
