120mlblack teastrongly brewed. I use 2 tea bags. (you can use a different tea)
200mlsoy milkor any other milk
2teaspoonssugarto sweeten at the end
Procédé
Boil the cubed taro for 45 minutes over medium heat. It should be tender enough to pierce with a fork.
Discard the water. Mash the cooked taro into a uniform paste. For a smoother paste, use a food processor or blender. Stir in the sugar while the paste is still hot. Set aside.
Add your tapioca pearls to a saucepan of boiling water. Add the 2 teaspoons of sugar and boil for 5 to 7 minutes. Once the tapioca pearls start to float, they are ready. Adjust the cooking time depending on how firm or soft you prefer them. Remove them from the hot water and set aside
Brew the tea and set aside
Finally, add the milk, sugar and tapioca pearls to the mixture. Serve hot or cold.
Notes
If you use a blender, it is more efficient to add the milk and tea directly to it along with the taro paste to blendIf you have sensitive skin, wear gloves while peeling the taro to prevent the saponin from irritating your hands.
