Dredge the pork in the flour, pressing lightly to coat evenly, then shake off any excess.
Dip into the beaten egg, coating completely and letting any excess drip off.
Coat thoroughly in the panko breadcrumbs, pressing gently to adhere, then shake off any excess.
Preheat the air fryer to 180°C.
Arrange the pork in a single even layer and cook for 15 minutes at 180°C, flipping halfway through.
Let rest for 2 minutes before slicing.
For the sauce, whisk the ketchup, Worcestershire sauce and sugar together in a small bowl until smooth.
