canned crushed tomatoes

dried basil or oregano

salt and pepper, to taste
Procédé
Prepare the filling
Heat the olive oil in a large skillet over medium heat.
Add the minced garlic and chopped onion, season with salt and pepper, and sauté until soft and translucent.
Add the washed spinach and cook until wilted and most of the moisture has evaporated.
Remove from the heat.
Chop the sautéed spinach, then mix it with the dairy-free crème fraîche.
Add the pine nuts and set aside.
Make the béchamel sauce
Whisk the cooking cream, vegetable broth, and cornstarch together in a saucepan.
Add the nutmeg and salt.
Cook over medium heat, whisking constantly, until the sauce thickens.
Remove from the heat and set aside.
Make the tomato sauce
Heat the olive oil in a saucepan over medium heat.
Sauté the chopped onion and minced garlic.
Add the crushed tomatoes, red pepper flakes, salt, and Italian herbs.
Simmer for 10-15 minutes, until the sauce thickens.
Season with freshly ground black pepper.
Remove from the heat and set aside.
Assemble and bake the cannelloni
Preheat the oven to 180°C.
Spread a thin layer of tomato sauce over the bottom of a baking dish.
Fill each cannelloni tube with the spinach mixture using a piping bag or a small spoon.
Arrange the filled cannelloni in a single layer.
Pour the béchamel sauce and the remaining tomato sauce over the cannelloni.
Cover the baking dish with aluminum foil and bake for 30 minutes.
Remove the foil and bake for another 10 minutes, or until the top is golden.
