Freeze the beef for 1 to 2 hours, until firm and very cold.

Top the rice with the seasoned beef.
Add the julienned pear.
Make a small well in the center and place an egg yolk inside.

Warning: This dish is made with raw beef and raw egg yolk. Use very fresh meat from a trusted butcher and freeze it for at least 1 hour before slicing. Not recommended for young children, pregnant women, older adults, or immunocompromised people. A pasteurized egg yolk is recommended. Eat the dish the same day; do not store leftovers.
