This recipe joins my collection of keto breads and doughs.\n\n\n\nWhat is a keto flaxseed and egg salad wrap?\n\n\n\nThe way you roll a wrap stays the same, but the base changes: the flatbread is made from finely ground flaxseeds, hydrated with hot water and seasoned with salt, instead of wheat. The filling comes down to three elements: iceberg for freshness and crunch, serrano, a dry-cured ham, for saltiness, chew and real umami depth, and a creamy egg salad made with hard-boiled egg, mayonnaise, mustard, chives, pickle and chili.\n\n\n\nIt all comes down to hydrating the flaxseed: once ground and mixed with hot water, its mucilage forms a gel, enough to bind the dough without wheat or egg. When cooking, judge by how well it holds together rather than its color, since brown flaxseed is naturally dark: about two minutes per side, until the surface is set, then let it rest before filling. The filling brings together familiar ingredients: egg and mayonnaise for richness, mustard and pickle for acidity, chives for freshness, serrano for saltiness, and iceberg for crunch. Another ham, such as smoked ham, will work in a pinch, but should not be confused with serrano, which is dry-cured. As a single serving, it travels well if each component stays thoroughly chilled and separate until rolling.\n\n\n\nThe main ingredients\n\n\n\nThe flatbread starts with 50&nbsp;g of flaxseeds ground as finely as possible, hydrated with 80&nbsp;ml of very hot water to trigger gel formation, with two pinches of salt divided between the dough and the salad. With the filling, expect closer to 2 to 7&nbsp;g depending on the seeds, condiments and how much of the flatbread you actually eat; on a French nutrition label, do not subtract fiber a second time. Serve with a green salad or raw vegetables, and use chili flakes cautiously, as you would sriracha sauce or sambal oelek.\n\n\n\nFor everyday keto cooking, here are all my low-carb recipes.\n\n\n\n\n\n\tFlaxseed Wrap with Egg Salad and Dry-Cured Ham (Keto)\n\t\t\n\t\t\t\n\t\n\t\t\t\n\t\n\t\t50 g flaxseeds (or ground flaxseeds)1 extra tablespoon flaxseeds (or ground flaxseeds)80 ml water (boiling or hot)1 egg1 small gherkin1 tablespoon mayonnaise1 teaspoon Dijon mustard or smooth mustard1 handful fresh chives1 teaspoon chili flakes1 slice Serrano ham (or another smoked ham)1 leaf iceberg lettuce2 generous pinches salt (Celtic sea salt)1 small drop avocado oil, mild olive oil or high-oleic sunflower oil\t\n\t\n\t\tGrind the flaxseeds as finely as possible. I use a small electric coffee grinder for this. Ready-ground flaxseeds also work.Heat the water in a kettle or draw boiling water from a boiling-water tap.Mix with the ground flaxseeds and salt. Leave to rest for half an hour.Meanwhile, boil the egg in a small saucepan. Then run it under cold tap water.Place a piece of parchment paper on the work surface (at least as large as the diameter of the frying pan). If the dough is still very sticky: sprinkle a little ground flaxseed onto the parchment paper. Flatten the dough on it and place the second piece of parchment paper on top. Roll out with a rolling pin. The edges can be slightly uneven.Remove the top piece of parchment paper. Press an upside-down bowl onto the dough. Remove the trimmings.Heat the frying pan. Add a few small drops of oil. Cook the wrap for about two minutes on each side. Leave to cool.Chop the egg and the gherkin. Finely snip the chives. Mix the egg with the gherkin, chives, mayonnaise, mustard, salt, pepper and chili flakes.Top the wrap with the lettuce. Place the ham on top. Spread with egg salad. Roll up.\t\n\t\n\t\tThe nutritional values are calculated using an American database that lists 2 g of carbohydrates per 100 grams of flaxseeds. For the wrap alone (without filling), this gives 1 g of carbohydrates per wrap.\nFor whole flaxseeds sold in Europe, allow a maximum of 13 grams of carbohydrates per 100 grams of flaxseeds. Since some dough is discarded and a wrap contains a lot of water, this gives a maximum of 6.5 grams per wrap. And between 6 and 6.5 per 100 grams (between 6 and 6.5).
