The secret to the classic American burger is finally revealed.\n\n\n\nFirst, the meat, the most important part. No need to mix spices into it, you just need a fat content of at least 20%. With that, you'll have the juiciest burger of your life, even cooked medium-well.Cheddar: buy it in a block, not the industrial pre-sliced kind\n\n\n\nSAUCE\n\n\n\n- 2 tbsp butter- 1 large onion, diced- 2 tbsp mustard- 1 tbsp Worcestershire sauce- 3 pickles, finely chopped- A handful of fresh chives, finely chopped- 115g mayo- 115g ketchup- 1 tiny pinch of baking soda\n\n\n\n1. Put the onions in a saucepan over medium heat with the butter and baking soda. Saut\u00e9 for about 15 min until caramelized (the baking soda speeds up the reaction; normally it takes 45 min, this one's on me \ud83d\ude18)2. Mix all the ingredients in a bowl\n\n\n\nONION RINGS\n\n\n\n- 3 onions, cut into rings- 150ml chilled lager beer- 100g wheat flour- 50g cornstarch- 3g baking powder- Salt- Optional: garlic powder, paprika, pepper\n\n\n\n1. Mix all the dry ingredients: 2\/3 wheat flour, 1\/3 cornstarch, a pinch of baking powder, a pinch of salt.2. Add the beer until you get a consistency similar to yogurt. \u26a0 Don't stir too hard or you'll lose the beer's bubbles \u26a0 Lumps are fine2b (optional) Down whatever's left in the glass because you're about to have a good time3. Heat frying oil in a saucepan, dip the onions SEQUENTIALLY first in the batter, then drop them into the oil.\u26a0 Don't add too many at once, it's often better to work in small batches4. Take them out once they reach the color you want and set them to drain on a plate lined with paper towels\n\n\n\n\n\n\n\nIf you love snack-bar food, check out my homemade kebab recipe","_links":{"self":[{"href":"https:\/\/marcwiner.com\/en\/wp-json\/wp\/v2\/posts\/146668","targetHints":{"allow":["GET"]}}],"collection":[{"href":"https:\/\/marcwiner.com\/en\/wp-json\/wp\/v2\/posts"}],"about":[{"href":"https:\/\/marcwiner.com\/en\/wp-json\/wp\/v2\/types\/post"}],"author":[{"embeddable":true,"href":"https:\/\/marcwiner.com\/en\/wp-json\/wp\/v2\/users\/1"}],"replies":[{"embeddable":true,"href":"https:\/\/marcwiner.com\/en\/wp-json\/wp\/v2\/comments?post=146668"}],"version-history":[{"count":0,"href":"https:\/\/marcwiner.com\/en\/wp-json\/wp\/v2\/posts\/146668\/revisions"}],"wp:featuredmedia":[{"embeddable":true,"href":"https:\/\/marcwiner.com\/en\/wp-json\/wp\/v2\/media\/118"}],"wp:attachment":[{"href":"https:\/\/marcwiner.com\/en\/wp-json\/wp\/v2\/media?parent=146668"}],"wp:term":[{"taxonomy":"category","embeddable":true,"href":"https:\/\/marcwiner.com\/en\/wp-json\/wp\/v2\/categories?post=146668"},{"taxonomy":"post_tag","embeddable":true,"href":"https:\/\/marcwiner.com\/en\/wp-json\/wp\/v2\/tags?post=146668"}],"curies":[{"name":"wp","href":"https:\/\/api.w.org\/{rel}","templated":true}]}}
