But don\u2019t worry, this isn\u2019t one of those sites where I tell my life story before I give you the recipe.\n\n\n\nNo, no, no\u2014this is a serious blog. Quick rundown: I cover the ingredients and the process, then bam\u2014we move on to the recipe!\n\n\n\n\n\n\n\nIngredients for stir-fried udon with pork, garlic and cabbage\n\n\n\nLight and dark soy sauce: Light soy sauce is the classic one you\u2019ll find at the supermarket. Dark soy sauce is a bit trickier to source, but you can pick it up at an Asian grocery.\n\n\n\nOyster sauce: It doesn\u2019t taste like oysters, but it\u2019s essential to the flavor of many Asian dishes. While you can make a passable substitute, I recommend getting the real thing.\n\n\n\nSesame oil: A fragrant oil with a divine flavor\u2014very potent, in fact\u2014so use it sparingly!\n\n\n\nHow to make stir-fried udon with pork, garlic and cabbage\n\n\n\nIt all starts with the \u201ccooking\u201d of the udon\u2014I put that in quotes because udon are often sold pre-cooked. They come vacuum-packed and already soft when you open the package.\n\n\n\nThe Beef udon is one of my most popular recipes\n\n\n\nUnfortunately, you can\u2019t toss them straight into the wok (if only!). Boil briefly\u20142 to 3 minutes\u2014gently stirring until they loosen and separate. Drain well in a colander, and you\u2019re set!\n\n\n\nNext, cook the bacon. Why bacon? Because fat is flavor. And why not slice it? Because laying it on top looks great on the plate.\n\n\n\nThat said, you can use other cuts of pork or slice the bacon; leaving it whole also helps it brown evenly on all sides. Worst case, slice it after cooking.\n\n\n\nThen it\u2019s business as usual. Saut\u00e9 the aromatics, then the vegetables, add the noodles, pour in the sauce, add the meat, and you\u2019re done! Set aside.Add the sesame oil and saut\u00e9 the garlic in the wok over high heat.When the garlic starts to brown, add the white parts of the cabbage and the onion.
